Cooking Game Hen in the Oven

Lemon Butter Cornish

4 Tyson Cornish Game Hens*
Vodka
8 thin slices lemon
8 thin slices butter
2 tsp. salt
1 tsp. white pepper
2 tsp. crushed tarragon
1 1/2 sticks butter
2 tsp. finely grated lemon rind
1 Tbs. lemon juice
1 1/2 C. chicken broth
1 Tbs. heavy cream
1/2 C. sour cream
1 Tbs. chopped parsley

Coat cornish with Vodka inside and out; let rest 15 minutes. Carefully loosen skin over the breast with fingers making a pocket (see mini-movie). Place 2 slices lemon and 2 slices butter in the skin pocket of each hen. Season inside and out with a mixture of salt, white pepper and tarragon. Place cornish on Spanek Roasters and coat with Lemon Basting Sauce (butter, rind and lemon juice) generously. Place in roasting pan. Pour in chicken broth to cover bottom of pan. Roast in preheated oven at 450(F) degrees for 15 minutes; reduce oven to 375(F) degrees and roast 30 minutes longer. Remove cornish from pan.

For sauce, reduce pan liquids to 1/2 quantity; add cream, sour cream and parsley. Simmer to thicken.

Barbecued Cornish
Hens and Corn

4 Tyson Game Hens*
Butter, melted

BBQ Sauce
1 clove garlic
2 tsp. salt
1/4 C. vinegar
1/4 C. lemon juice
1/4 C. oil
1/2 tsp. worcestershire
2 Tbs. chopped onion
1 tsp. paprika
1/2 C. brown sugar
1/4 C. catsup

Brush hens with butter, place on Spanek Vertical Game Hen Roasters. Mash garlic and salt together in bowl; combine with remaining ingredients. Set racks of cornish on the grill over coals and cover BBQ ( See movies to set up coals ). Brush with sauce every 10 minutes for about 45 minutes -- or until tender.

Serves 4

Corn in Foil
Remove husks and silk from ears of corn. Spread each ear with soft butter, sprinkle with Spanek's original Seasoning Blend. Wrap in foil. Lay on grill around the edges for 20-30 minutes -- turning once.




Cornish Flambe with Cherries

4 Tyson Game Hens*
1/4 lb. cherries pitted
2 C. red wine
1/2 tsp. cinnamon
1 tsp. bell pepper flakes
1/2 tsp. salt
1 Tbs. cornstarch
2 tsp. water
1/2 stick butter
1 C. Kirsch 

Rinse cornish and pat dry. Place on Spanek Roasters and set in roasting pan with 1 1/2 cups water on the bottom. Cook cornish in preheated oven at 450(F) degrees for 15 minutes; reduce heat to 375(F) degrees and roast 30 minutes longer.

Place cherries in a pan with red wine, cinnamon, bell pepper flakes and salt. Cook slowly, covered, for 30 minutes.

Strain sauce, reserving cherries and peppers and return liquid to medium heat. Mix cornstarch and water. Add to sauce a little at a time. Reduce to simmer. Add butter and heat until melted.

Just before serving, add reserved cherries and peppers. Heat sauce 5 minutes more. Add a glass of Kirsch and flambe. Serve sauce with hens or cover hens with sauce and then flambe.

Serves 4

Reduce recipe for two people for a special romantic meal.

Sweet-Sour Glazed Cornish

4 Tyson Game Hens*
1/4 C.lemon juice
1/2 C. unsalted butter
1/4 C.white wine
salt and pepper

Glaze Sauce
1 C. currant jelly
1 1/2 Tbs. hot peppered mustard
1/2 crushed rosemary
1 Tbs. lemon juice

Clean cornish with lemon juice; pat dry. Generously coat inside and out with mixture of melted butter and wine. Place on Spanek Roasters, sprinkle with salt and pepper. Place in roasting pan with 1 1/4 C. water. Roast in preheated oven at 450(F) degrees for 15 minutes; reduce oven to 375(F) degrees and roast 30 minutes longer.

Meanwhile, combine Glaze Sauce ingredients in a pan and heat until jelly melts. The last 10 minutes of roasting, brush cornish with Glaze Sauce and brush again after cooking.
