The 4 legged Turkey Recipe!
Nobody’s fighting over the turkey drumsticks anymore here in the Spanek Family. Our Vertichoke™, Veggie, Meat rack is now been adapted to fit Turkey drum sticks on the wide end or flip the rack over for chicken drumstick on the smaller side.
Application and prep is easy. Fun and delightful at holiday time and even by itself all year round. Smoke BBQ as well/ play and practice.
Wet down the poultry, sprinkle American blend and/or Garlic seasoning blend on the drums either one....or both, then marinate in your favorite BBQ sauce, mine is teriyaki glaze with a touch or apricot jam on it.
Mount the drumsticks on the side that best fits the size of the drumstick.
Put them in the pan after you put the roast in the oven.
For chicken drumsticks, with some thongs pull them out after 45 minutes and /or put them in after you reduce the heat in the beginning. the drumstick will be done about 20 minutes sooner then your chicken.
For Turkey Drumsticks give the drums a good hour....In the beginning and pull out and or slide them in after the first hour, depending on the size of the drums they’ll go 50 + minutes.
I did 3 Turkey drumstick by themselves one day to test and see where the timing was on my oven , doneness wise. and now I do Hawaiian drumsticks as appetizer all the time.
Here’s a little history on the racks growth now 30 years in time.
The Vertichoke™ is an amazing product: Invented by Denis Spanek for Maurice Cazalis ( One of Julia Child Master chef mentor chefs from the 1949/ 50’s Cordon Blue classes in Paris) Maurice asked Denis to come up with a stand to cook the prefect artichoke upside down so when you cut the top of the artichoke off the artichoke steam raises up in between the leaves, and the choke itself never touches the broth below, the steam raises perfectly to keep in all the natural flavors.
You can stack them in a larger steamer pot, 4 on the bottom and 4 on top , cover the lids.... chokes take 20-40 minutes depending on the size.
Years latter, Chefs started to use the artichoke holder for Broccoli, Cauliflower, Baked Potatoes. Corn , wrapped in foil , Stack asparagus.....in the oven and or BBQ.
