It's my wife Carol's favorite way to have zucchini!"
Ingredients
Place zucchini in a colander and press out water. Place
zucchini and onion in a large bowl. Stir in eggs, flour, and my
Italian Blend seasoning.
Heat the oil in a large skillet. Drop rounded
tablespoons of zucchini batter into the hot oil. Cook two minutes on
each side and drain on paper towels. Serve immediately.
