Enhancing Flavor with the Spanek Vertical Roaster

To permeate your poultry with fabulous flavor, simply slip your favorite fruit, vegetable, sauce, or spices under the skin. To do that, beginning at the neck of the poultry, gently separate the skin from the meat with yuor fingertips down to the thigh and over the breast area. Slip in your seasonings, and roast the bird.

Poulet Bleu – Combine 3 oz. crumbled bleu cheese with two minced garlic cloves and slide the mixture gently under the breast skin.

Sweet 'n' Sour – Combine 1 C currant jelly, 1-2 Tbs hot dry mustard, ¼ tsp crushed rosemary, and 1 Tbs lemon juice. Spoon the mixture under the skin.
